Apple pie Cocktail

- 50 ml Dark Rum Plantation original dark
- 30 ml Apple puree Crop's
- 20 ml Cinnamon and star anise syrup
- 30 ml Lemon juice
- 60 ml Ginger beer
- 250 g Ice cubes
- Cinnamon stick
- Star anise
- Mint sprigs
Make the star anise syrup in advance. Bring to boil 1l of water with 6 cinnamon sticks and 3 star anise pieces. Add 1kg of sugar and reduce the heat. Keep stirring till the sugar is diluted. Cool off, filter and bottle.
Pour all ingredients into the shaker (except for the Ginger beer). Add ice and shake hard. Fine strain in pre-chilled longdrink over ice cubes. Gently pour the ginger beer in the glass.
Give a gentle stir.
FinishingDecorate with cinnamon, star anise and some mint.
